Filets de truite fumés

Simple et goûteux,je les ai servies sur un petit dôme de salade de pomme de terre au citron confit au four et les dernière feuilles de menthe qui ont résisté au gel,surmonté de tomates séchées à l'huile d'olive et herbes du balcon de cet été, rouelles de courgette grillées à sec, poireau vinaigrette de cet automne et quartiers de tomate pelati fraîche.

Pour la réalisation:

Lever les truites en filets, récupérer les arêtes pour un fumet,ça fera un excellent fond de sauce pour une autre préparation.
Les assaisoner de gros sel (léger,8-9 grains par filet) un bon tour de moulin à poivre, j'ai utilisé le "poivre 5 baies" de Mc Cormick.
Préparer le fumoir, je ne sais pas ce que c'est comme essence, ce n'est pas spécifié sur l'emballage et comme m'a dit la vendeuse "- C'est leur secret! ".
Mettre à fumer, j'ai mis 5 minutes à feu vif puis 20 à feu doux, mais il faisait 0 degré, ça peut jouer un rôle sur le temps de fumage.
Refroidir, tailler en goujon et dresser sur la salade tiède, la sauce au citron confit doit être un peu généreuse pour pouvoir y tremper les goujons de truite.
